HOME// Avocado Eggs

Well the title pretty much describes this one {haha}. I had been wanting to try this dish for a while and when I was coming home from spin today I realized I actually had all the ingredients to make it. {that never happens!} Here is this SUPER simple recipe.

Avocado Eggs

1 large avocado
2 eggs
salt
pepper
{garlic salt + crushed red peppers}*optional
1-2 pieces of bacon

Set oven to bake at 425°. Start by cutting your avocado in half and removing the seed. Take a spoon and remove some of the insides. {Trust me you will want to do this, the eggs with spill out of the avocado if you don't}. Crack an egg in each of the avocado halves and place on baking sheet or in a muffin tin. Put them in the oven and set the timer for 15-20 min. Keep an eye on them but depending on how big the avocado/eggs are the longer you will leave them in. {I left mine in for about 16ish minutes I think. I forgot to set the timer at first...oops.} Let cool for a couple minutes in pan. Place halves on plate, cut up bacon into little pieces and garnish on top of the avocados. Enjoy!

*If you are wondering what I did with the insides of the avocado you can do 1 of 2 things. To be completely honest, I mashed it up sprinkled some garlic power + salt in and ate it on the couch while my avocado/eggs were cooking {haha}! Or you could eat it with your baked avocados. I think the first option is more fun :) 


Hopefully you guys enjoyed this little quick and easy recipe. I have been cooking a lot more lately {trying a new recipe in the crockpot for dinner tonight, currently} and I'm really enjoying it! So you may see some more easy recipes in the future. Happy Monday everyone.
